Healthy Snickers Bars

Ingredients

Date Caramel

  • 1 cup  soaked pitted Medjool dates  cover with boiling water, let sit for 15 minutes
  • 3 tbsp creamy peanut butter
  • 1 pinch salt

Cookie Base

  • ¾ cup almond flour
  • ¼ cup oat flour
  • 1 tbsp honey
  • 3 tbsp date caramel from above
  • 1 tbsp coconut oil melted and cooled

Chocolate Coating

  • cups chocolate
  • ½ tbsp coconut oil

Other Ingredients

  • cup roasted salted peanuts

Instructions

  • First, line a loaf pan with parchment paper and then begin by making the caramel filling. 

Date Caramel

  • In a bowl, cover pitted dates with boiling water. Let the dates soak for 15 minutes to soften.
  • Drain the water then add dates, peanut butter, a pinch of salt, and water to a blender.
  • Blend for about two minutes or until all the ingredients are evenly combined. 
  • Next, make the cookie base. 

Cookie Base

  • In a mixing bowl, combine oat and almond flour. After that, add caramel filling, peanut butter, and honey.
  • Using a spoon mix the ingredients to form the dough.
  • The dough should be a little sticky. If it is too sticky add a little more oat flour. Press the cookie base into the pan.
  • Next, scoop the caramel layer on top.
  • Press peanuts into the caramel. Place in the freezer to harden for 1 hour.

Chocolate Coating

  • Once the bars harden, melt chocolate chips and coconut oil in the microwave in 30-second intervals. Make sure you mix it each time. 
  • Slice into 8 equal bars and dip them into the melted chocolate. 
  • Place in the freezer to harden for 20 minutes. Drizzle with remaining chocolate and sprinkle sea salt.
