Twix Cookies

Servings: 7 cookies

Ingredients

Base Cookie

  • 2 eggs
  • 1 tsp vanilla extract
  • 4 tbsp maple syrup
  • cup coconut flour
  • ½ tsp salt

Date Carmel Layer

  • 1 cup dates pitted
  • 1 tbsp unsweetened almond milk
  • 2 tbsp water add more as needed
  • 1 tsp vanilla extract
  • ¼ tsp salt

Chocolate Topping

  • ¼ cup chocolate melted

Instructions

  • Preheat the oven to 350F and line a baking sheet with parchment paper.
  • In a medium-sized mixing bowl, combine eggs, maple syrup, and vanilla extract.
  • Add coconut flour and salt to the same bowl. Mix everything using a rubber spatula. Slowly add melted coconut oil.
  • Scoop two tablespoons of dough into your hands and roll them into balls. After that, smush into cookie shapes on a baking sheet.
  • Bake for 12-15 minutes or until golden.
  • While the cookies are cooking, make the date caramel by adding the dates, water, and almond milk to a blender. Blend until evenly combined.
  • Allow the cookies to cool.
  • Scoop one tablespoon of date caramel onto each cookie and spread evenly.
  • Melt the chocolate and add chocolate on top of the caramel. Sprinkle with salt (optional).
  • Freeze for 10-15 minutes or until the chocolate hardens.
  • Enjoy!
