Twix Cookies
Servings: 7 cookies
Ingredients
Base Cookie
- 2 eggs
- 1 tsp vanilla extract
- 4 tbsp maple syrup
- ⅔ cup coconut flour
- ½ tsp salt
Date Carmel Layer
- 1 cup dates pitted
- 1 tbsp unsweetened almond milk
- 2 tbsp water add more as needed
- 1 tsp vanilla extract
- ¼ tsp salt
Chocolate Topping
- ¼ cup chocolate melted
Instructions
- Preheat the oven to 350F and line a baking sheet with parchment paper.
- In a medium-sized mixing bowl, combine eggs, maple syrup, and vanilla extract.
- Add coconut flour and salt to the same bowl. Mix everything using a rubber spatula. Slowly add melted coconut oil.
- Scoop two tablespoons of dough into your hands and roll them into balls. After that, smush into cookie shapes on a baking sheet.
- Bake for 12-15 minutes or until golden.
- While the cookies are cooking, make the date caramel by adding the dates, water, and almond milk to a blender. Blend until evenly combined.
- Allow the cookies to cool.
- Scoop one tablespoon of date caramel onto each cookie and spread evenly.
- Melt the chocolate and add chocolate on top of the caramel. Sprinkle with salt (optional).
- Freeze for 10-15 minutes or until the chocolate hardens.
