This paleo, gluten free, and dairy free giant cookie cake is a guilt free treat that is super easy to make. Made with an almond flour cookie cake, a date caramel, your favorite melted chocolate chips, and of course sea salt!

Ingredients
Cookie Cake
- 2 cup almond flour
- 2 tbsp coconut flour
- ½ tsp baking soda
- ½ tsp sea salt
- 2 eggs
- ¼ cup coconut oil melted + more for greasing or use coconut oil spray
- ½ cup maple syrup
- 1 tsp vanilla
Date Caramel
- 1 cup dates pitted
- 1 tbsp unsweetened almond milk
- 2 tbsp walker + more if needed
- 1 tsp vanilla
- ¼ tsp salt
Additional Ingredients
- ⅓ cup chocolate chips I used Hu Gems to make it paleo
- sea salt to sprinkle- optional
Instructions
- Preheat oven to 350 degrees F.
- Prepare a 8-inch pan by spraying or greasing with coconut oil. Then cut the parchment paper to fit the base of the pan.
- In a bowl, whisk together eggs, coconut oil, maple syrup, and vanilla extract. Add almond flour, salt and baking soda. Mix until everything is incorporated. Pour the batter into the prepared pan.
- Bake for 20-25 minutes. Until golden brown.
- Make the date caramel by adding the dates, water, and almond milk to a blender. Blend until evenly combined.
- Evenly distribute the date caramel onto the cookie cake.
- Melt chocolate chips and then pour chocolate onto the date caramel. Evenly spread the chocolate.
- Optional- Sprinkle with sea salt.
- Let the chocolate harden then enjoy!
