This paleo, gluten free, and dairy free giant cookie cake is a guilt free treat that is super easy to make. Made with an almond flour cookie cake, a date caramel, your favorite melted chocolate chips, and of course sea salt!

Ingredients

Cookie Cake

  • 2 cup almond flour
  • 2 tbsp coconut flour
  • ½ tsp baking soda
  • ½ tsp sea salt
  • 2 eggs
  • ¼ cup coconut oil melted + more for greasing or use coconut oil spray
  • ½ cup maple syrup
  • 1 tsp vanilla

Date Caramel

  • 1 cup dates pitted
  • 1 tbsp unsweetened almond milk
  • 2 tbsp walker + more if needed
  • 1 tsp vanilla
  • ¼ tsp salt

Additional Ingredients

  • cup chocolate chips I used Hu Gems to make it paleo
  • sea salt to sprinkle- optional

Instructions

  • Preheat oven to 350 degrees F.
  • Prepare a 8-inch pan by spraying or greasing with coconut oil. Then cut the parchment paper to fit the base of the pan.
  • In a bowl, whisk together eggs, coconut oil, maple syrup, and vanilla extract. Add almond flour, salt and baking soda. Mix until everything is incorporated. Pour the batter into the prepared pan.
  • Bake for 20-25 minutes. Until golden brown.
  • Make the date caramel by adding the dates, water, and almond milk to a blender. Blend until evenly combined.
  • Evenly distribute the date caramel onto the cookie cake.
  • Melt chocolate chips and then pour chocolate onto the date caramel. Evenly spread the chocolate.
  • Optional- Sprinkle with sea salt.
  • Let the chocolate harden then enjoy!
