The “Not Too Stuffed” Turkey Sandwich

What is better than Thanksgiving dinner? The next day’s leftover turkey sandwich. I hope you are not too stuffed to try this recipe! It has everything you love about Thanksgiving between two delicious slices of bread and an easy to make cranberry aioli.

No one should have to cook the day after Thanksgiving which is why this is my family’s go-to Black Friday meal! However, this sandwich is great any time during the holiday season (or year-round if you love turkey as much as I do!)

A great sandwich needs great bread!

What is a sandwich without hardy, delicious bread? You need those bookends with the perfect crust, soft inside, and savory flavor. That is why I use La Brea Bakery bread for all of my sandwiches. They have a variety of choices but for this recipe, I chose the Italian Round Loaf. This loaf has a soft and golden crust with a subtle flavor that pairs perfectly with all the Thanksgiving leftovers. The Italian Round Loaf lightly toasted with cranberry aioli is a match made in heaven.

How do I make this sandwich?

Begin by making the cranberry aioli. In a mixing bowl, whisk mayo and cranberry sauce together. Next, lightly toast the slices of bread. After that, spread cranberry aioli on one slice of bread and sprinkle black pepper. From there, layer spinach, stuffing, and turkey. After that, add a slice on top. Cut it in half and enjoy!

  • 3 pieces Turkey
  • ½ cup Stuffing
  • ½ cup Spinach
  • 3 tsp Cranberry Sauce
  • 2 tbsp Mayo
  • ½ tsp Black Pepper

Instructions

  • Begin by making the cranberry aioli. In a mixing bowl, whisk mayo and cranberry sauce together.
  • Next, lightly toast the slices of bread. After that, spread 1 tablespoon of cranberry aioli on one slice of bread and sprinkle black pepper on top of it.
