Strawberry and Goat Cheese Salad

This strawberry and goat cheese salad is the perfect Spring lunch or dinner. It is full of fresh fruit, sweet potatoes, avocado, shredded carrots, goat cheese, and a homemade maple balsamic dressing. To make it a meal, top it with grilled chicken breast.

  • Spring Mix
  • Strawberries

If you are adding chicken

  • Chicken Tenders
  • Thyme
  • Salt
  • Pepper

How to Make the Strawberry and Goat Cheese Salad

This mix of fruit and vegetables makes for the perfect sweet and savory salad. This salad is super easy to make and a fun, festive Spring dinner.

Begin by roasting the sweet potatoes—Preheat the oven to 375°F. Dice the sweet potato and season with olive oil, salt, and pepper. Place on a baking sheet and back for 35 minutes.

While the sweet potatoes are roasting, start grilling the chicken. Begin by seasoning the chicken tenders with salt, pepper, and thyme on each side. Grill each side for 5 minutes or until fully cooked. Next, prepare the salad. In a salad bowl, add spring mix, sliced strawberries, shredded carrots, avocado, goat cheese, and roasted sweet potatoes. Top with grilled chicken and homemade maple balsamic dressing. Toss and enjoy!

 

I used a stovetop grill and my grilled chicken turned out great!
