Salmon with Mango Salsa and Coconut Lime Cauliflower “Rice”

This Salmon with Mango Salsa and Coconut Lime Cauliflower “Rice” is something you need to try this summer. It is spicy, sweet, fresh, and healthy! 

During the summer, I love adding fresh fruit into a dish whenever I can. It makes the meal fresh and full of flavor. Nothing better than a light, easy meal during a heatwave! 

Ingredients 

Sweet and Spicy Salmon

  • Salmon
  • Brown sugar
  • Coconut sugar 
  • Chili powder
  • Cayenne pepper
  • Ground cumin
  • Pepper
  • Salt

Coconut Lime Cauliflower “Rice”

  • Cauliflower rice- You can make your own cauliflower rice or buy it premade. I got mine from premade from Trader Joe’s
  • Yellow onion
  • Garlic
  • Ginger
  • Lime
  • Red pepper flakes

Mango Salsa

  • Mango
  • Avocado
  • Red pepper
  • Jalapeño
  • Lime
  • Salt
  • Pepper
  • Cayenne pepper

How do I make the sweet and spicy salmon?

Begin by preheating the oven to 357°F and lining a baking sheet with aluminum foil.

Next, make the seasoning that you will use to coat the salmon. In a ramekin, jar, or small bowl, add brown sugar, coconut sugar, chili powder, cayenne pepper, ground cumin, salt, and pepper. Make sure you mix everything together.

After that, using your fingers, massage the sweet and spicy seasoning onto the salmon. Make sure you coat the entire piece!

Bake on 357°F for about 12 minutes.

While the salmon is baking, make Coconut Lime Cauliflower “Rice”.

How do I make coconut lime cauliflower “rice”?

Heat a saucepan over medium heat add olive oil, diced onions, ginger, and garlic. Saute for about 5 minutes. Next, add the cauliflower rice and mix, then cover and cook for two minutes. After that, add coconut milk and lime juice. Mix and put on simmer until you are ready for it. 

How do I make the mango salsa?

This is one of my favorite salsa, and it does not take long to make at all.

Begin by cutting the mango, avocado, jalapeño, and red pepper into small pieces. After that, in a bowl, combine the mango, avocado, jalapeño, and red pepper. Then squeeze in fresh lime juice and mix it. Sprinkle with salt, pepper, and cayenne pepper, and there you have it!

  • 1 cup yellow onion diced about half a large onion
  • ½ tbsp garlic
  • ½ tbsp ginger minced
  • cup cauliflower rice trader joes frozen
  • 1 cup coconut milk
  • ½ lime juiced
  • 1 lime zested
  • red pepper flakes
