Salmon with Cauliflower Fried Rice

Ingredients Needed to Make Salmon with Cauliflower Fried Rice
Cauliflower Fried Rice
- Caulifower RIce
- Trader Joe’s Asian Style Vegetable Stir Fry
- Frozen Crushed Ginger (from Trader Joe’s) or Minced Ginger
- Garlic
- Coconut Aminos
- Soy Sauce
- Eggs
- Avocado Oil
- Salt and Pepper

- Salmon
- Olive Oil
- Coconut Aminos
- Minced Garlic
- Fresh Ginger
- Salt and Pepper
- Sesame Seeds (Optional)
- Green Onions (Optional)
How to Make Salmon with Cauliflower Fried Rice
Make the marinade for the salmon.
Add coconut aminos, freshly grated ginger, minced garlic, salt, and pepper to resealable freezer bag and seal. Shake to coat the salmon with the marinade. Marinate the salmon in the refrigerator for at least 30 minutes.
Once you’re ready to start cooking…
Preheat the oven to 375F and line a baking sheet with aluminum foil.
Next, make the cauliflower fried rice.
Heat a medium-sized skillet over medium heat. Add avocado oil, Trader Joe’s Asian Style Vegetable Stir Fry, minced garlic, and crushed or minced ginger. Saute for 5 minutes- stirring frequently. Then mix in the riced cauliflower and saute for another 5 minutes. Make a hole in the center and add eggs. If you do not have enough room in this skillet use another and then add them. Scramble the eggs and then mix them in with everything else. After that mix in the coconut aminos and soy sauce. Turn the heat down to simmer while you cook the salmon.
Place marinated salmon on the aluminum foil-lined baking sheet. Bake at 400F flesh side up, for about 10-15 minutes, or until your desired temperature. The center of the salmon should be a little soft.
Remove from the oven and top with sesame seeds and green onions. Serve with fried cauliflower rice and enjoy!

- 2 cup riced cauliflower 1 bag of frozen riced cauliflower from Trader Joe's
- 1 container Trader Joe's Asian Style Vegetable Stir Fry
- 2 tbsp crushed or minced ginger 2 cubes of frozen crushed ginger from Trader Joe's
- 1 tbsp minced garlic
- ¼ cup coconut aminos
- ¼1 cup soy sauce
- 3 eggs
- salt and pepper to taste
