Raspberry Chocolate Energy Bites

These Raspberry Chocolate Energy Bites make the perfect sweet and healthy treat. The bites are full of protein and fiber and will satisfy your sweet tooth this Valentines’s Day!

Around 3 pm each day, I feel like I need a little pick-me-up. The school day is winding down and I am already looking forward to dinner. These energy bites are the perfect bridge snack to leave you satisfied until dinner. They are made with real ingredients and preparation takes about 15 minutes.

Energy Bite Ingredients

  • Oat Flour- Oat flour is the base of these energy bites. To make oat flour, just add oats to a high-speed blender and blend until it is really fine. 
  • Almond Butter- Almond butter is the glue.  You want to use all-natural almond butter. The only ingredients should be almonds (and salt if you like it slightly salty) 
  • Chocolate Protein Powder–  Primal Kitchen Chocolate Coconut Collagen Fuel is my favorite protein powder. I use it daily in my smoothies and love adding it to sweet treats too. You know how some protein powders taste like… protein. Not this one! It adds a great chocolatey flavor to these bites.  
  • Cocoa Powder- Cocoa powder is a decadent chocolate flavor. It is bitter but when mixed with everything else, it creates the brownie taste. 
  • Coconut Sugar- I love coconut sugar. It is a great paleo-friendly sugar.
  • Pure Maple Syrup- Nothing better than a natural sweetener that will also help hold everything together!
  • Coconut Oil- Make sure you use refined coconut oil so your bites do not taste like coconut. This healthy fat will also help hold everything together. 
  • Vanilla Extract
  • Salt- Do not add if you used salted almond butter.

Raspberry Jelly Filing

  • Frozen or Fresh Raspberries- Either work!
  • Chia Seeds- This tiny superfood is one of my favorites. They are full of fiber, omega-3 fatty acid, and protein! Small but mighty!
  • Water

Making the raspberry jelly filling 

Begin by heating a saucepan over medium heat and add raspberries, water, and chia seeds. Mix everything together and flatten it with a spatula. Put the jelly in a jar and place it in the fridge to cool while you prepare the energy bites.

Making the energy bites

Add all of the ingredients to a bowl and mix them together. After that, using the tablespoon cookie scoop, scoop mixture into your hands and flatten it out. Add half a teaspoon of the jelly to the center of the dough. Carefully fold the edges of the dough around the jelly and roll it into a ball. 

After you make all of the bites, mix coconut sugar and cocoa powder on a plate. Roll the energy bites in the cocoa sugar mixture. Place them in the fridge for about an hour or until firm. Store in the fridge or freezer. Enjoy!

Raspberry Jelly Filling

  • 1 cup raspberries fresh or frozen
  • 1 tbsp chia seeds
  • 1 tbsp water

Energy Bites

  • ½ cup oat flour
  • ½ cup almond butter
  • 2 scoops chocolate protein powder Primal Kitchen Chocolate Coconut Collagen Fuel
  • ½ tbsp cocoa powder
  • 1 tbsp coconut sugar
  • 1 tbsp maple syrup
  • 1 tbsp coconut oil melted

For Rolling

  • 1 tbsp coconut sugar
  • ½ tbsp cocoa powder

Instructions
