Paleo Zucchini Fritters
These Paleo Zucchini Fritters are super easy to make and can be a perfect breakfast with a fried egg on top. They are a great way to sneak veggies into your breakfast.
Ingredients needed to make paleo zucchini fritters
- Zucchini: You will need to shred the zucchini and then allow it to sweat. To sweat the zucchini, you will sprinkle it with salt and let it sit for about 20 minutes, and then ring out the moisture.
- Coconut and Tapioca Flour: These paleo flours will help hold the fritters together and create the fluffy consistency.
- Bacon: The bacon makes these fritters! Make sure you cook the bacon before adding it to the batter. I love Trader Joe’s Uncured Black Forest Bacon. Cook it on a skillet or air fry it.
- Garlic Powder: This will add some more flavor to the fritters.
- Eggs: This recipe calls for two eggs. One to hold the zucchini batter together and another to make it a meal. Adding a fried egg on top of these fritters makes for a great breakfast.

How to make these fritters
Begin by shredding the zucchini and then sprinkling it with salt. Let it sit to sweat for about 20 minutes. While the zucchini is sweating, cook bacon according to the package. After 20 minutes, transfer the zucchini to a paper towel and squeeze all of the water out of it. Make sure you do this over the sink! Cut cooked bacon into half an inch pieces. Then, add zucchini, bacon pieces, egg, garlic powder, coconut flour, tapioca flour, salt, and pepper to a mixing bowl. Mix everything together using a fork. Heat a large skillet over medium heat with olive oil. Divide the mixture in half and create two patties. Carefully place patties onto the heated skillet. Cook each side for 2-3 minutes. While fritters are cooking, fry your egg. Top with green onions, goat cheese, or your desired toppings.
