Paleo Sugar Cookies
These Paleo Sugar Cookies are soft, sweet, and made with no refined sugars or flours. Topped with Hu Kitchen Paleo Gems and Beekeeper’s Naturals nature’s sprinkles- bee pollen. These “sugar” cookies are a must-try!
Ingredients needed to make paleo sugar cookies
- Paleo Flour: Paleo flour is made with almond flour, tapioca starch, cassava flour, and coconut flour. I like using this flour because it has the perfect ratio of each ingredient. I got mine off of Thrive Market.
- Coconut Flour: For this recipe, you will need to add a little more coconut flour. It does not make the cookie taste like coconut. It adds a naturally sweet flavor to the cookie.
- Coconut Sugar: Coconut sugar is a great paleo option to sweeten up the cookies.
- Maple Syrup: Make sure it is 100% maple syrup. This is another great paleo option for a sweetener.
- Chocolate Chips: Hu Kitchen Chocolate Gems are my absolute favorite paleo chocolate. They also melt perfectly and create a great hard shell.

How to make these “sugar” cookies
Preheat the oven to 350F and line a baking sheet with parchment paper.
In a mixing bowl, mix together paleo flour, coconut flour, baking soda, and salt. In another bowl, add maple syrup, melted coconut oil, and vanilla extract. Using a hand mixer or a whisk, slowly mix dry ingredients to the wet until a dough forms.
Next, cut two pieces of parchment paper the size of a cookie sheet. Place the dough between the parchment paper pieces and roll out 1/4 inch thick. Using a circle cookie cutter or mason jar lid, cut circles out of the dough. Move circles to the baking sheet and repeat the process until all the dough is used. Bake at 350F for 7-minutes or until golden brown. Move cookies to a cooling rack to cool completely before adding chocolate and bee pollen.
Melt chocolate for 1 minute in the microwave. Add 1/2 tablespoon of chocolate to each cookie and then sprinkle with bee pollen. Set aside to let the chocolate harden and then enjoy!

- 2 tsp vanilla extract
