Can you do better than peanut butter and chocolate? These buckeyes are so easy to make and are made with real ingredients. During the holidays, the kitchen and oven can get crowded. Free up some oven space and save yourself some time by making these buckeyes instead of a more traditional cookie that needs to be baked!

Paleo Chocolate?!

The chocolate I used keeps these buckeyes paleo-friendly. Hu Chocolate Gems are made with organic cocoa, coconut sugar, and cocoa butter. Their chocolate tastes amazing and melts perfectly! I highly recommend it! If you do not have Hu Chocolate Gems, any type of semi-sweet chocolate chips will work.  (Another paleo-friendly option are chocolate chips from Enjoy Life Food – they also melt nicely and are made without dairy or nuts but use cane sugar instead of coconut sugar). Read the label of whatever type of chocolate you choose to use and make sure the ingredients work for you!

Here is what you need to make these buckeyes!

Ingredients

  • All-Natural Peanut Butter- Your peanut butter ingredients should just be peanuts and possible salt. Make sure it does not have any added sugars. I promise you will not miss the old sugary peanut butter!
  • Flaxseed Meal- Flaxseeds consist of protein, fiber, and omega-3 fatty acids. It adds a subtle nutty flavor to the cookies
  • Almond Flour- I like to use almond flour as opposed to all-purpose because it contains fewer carbs and provides a lot of protein.
  • Chocolate Chips – Look for paleo options like Hu Chocolate Gems or Enjoy Life Chocolate Chips 
  • Vanilla Extract

How do I make these buckeyes?

In a mixing bowl, combine all-natural peanut butter, vanilla extract, flaxseed meal, and almond flour. Mix everything together thoroughly. Next, using a tablespoon cookie scoop, scoop cookie dough into your hand and roll it into a ball. Place cookie dough balls on the baking sheet or Tupperware lined with parchment paper. Freeze cookie dough for 45 minutes to an hour. Once frozen, in a microwave-safe bowl, melt chocolate chips for one minute. After that, using a spoon, slowly lower the dough into the melted chocolate chip. Using a spoon may help you to cover the dough in chocolate.  Remember, don’t cover the eye!! Place the cookies back in the freezer for about 30 minutes. Store in the refrigerator in an airtight container or freeze for up to three months.
