Maple Walnut Granola 

Did you know that maple extract exists? I just found out, and it is a game-changer! This maple walnut granola has a great balance of maple flavor and sweetness. It is a perfect breakfast with milk, a topping to your favorite yogurt, or a snack by itself.

What ingredients do I need to make maple walnut granola? 

  • Rolled oats- Organic, all-natural rolled oats are a great ingredient to use. Oats are good for your cholesterol and full of fiber and antioxidants. Oats also help control blood sugar levels.
  • Maple syrup When selecting your maple syrup, it is important to look at the ingredients list and make sure there are no added sugars, preservatives, or additives. Don’t worry, it is still delicious and sweet!
  • Maple extract- I just found out this exists, and it is a game-changer! It brings out the maple flavor more.  I got mine on Amazon.
  • Coconut sugar  Coconut sugar is a great substitute for cane sugar. It is lower in glycemic index and adds a sweet caramel flavor.
  • Coconut Oil– Coconut oil adds a buttery coconut flavor to the granola.
  • Chia seeds- Chia seeds are small but mighty. They have massive amounts of nutrients with very few calories.
  • Quinoa- Quinoa is full of protein and fiber, and it adds a great crunch to this granola. 
  • Sunflower seeds- I used sunflower seeds because they add a nice crunch. However, you can sub for a different seed or nut.
  • Walnuts – You can sub whatever nuts you prefer or have around the house. I used walnuts because they pair so nicely with maple.  
  • Cinnamon 
  • Salt

How do I make maple walnut granola?

Begin by preheating the oven to 325°F and line a baking sheet with parchment paper. 

In a mixing bowl, mix rolled oats, coconut sugar, chia seeds, uncooked quinoa, sunflower seeds, walnuts, chia seeds, cinnamon, and salt. After that, in a small saucepan, heat over medium heat coconut oil, maple syrup, and maple extract. Mix until everything melts together. It should take about 2 minutes. Next, pour the coconut oil and maple mixture over the oat mixture. Fold together, making sure everything gets coasted. Spread onto parchment paper and bake for 20-30 minutes, or until dry and crunchy but not burnt. Make sure to stir 1-2 times throughout cook time to cook evenly.

What ways can I use maple walnut granola?

  • By itself as a snack. I love snacking on this granola. It is filling and satisfies my sweet tooth throughout the day.
  • A yogurt topping. I love topping my yogurt with granola, almond butter, and fresh fruit. The granola gives it the perfect crunch while the almond butter adds more protein and flavor. This maple walnut granola is amazing with RX vanilla almond butter. I love RX almond butter; I feel like I am eating cookie dough… It is that good! The vanilla pairs perfectly with the maple. I HIGHLY recommend this duo. 
  • In or on a smoothie 
  • With your favorite milk or milk alternative for a crunchy cereal.
