Maple Walnut Cookies 

These maple walnut cookies will not disappoint! They are soft, chewy, and full of maple flavor thanks to the pure maple syrup and maple extract. It is hard to just eat one! 

Ingredients

Dry Ingredients 

  • Almond flour I love baking with almond flour. It is low in carbs and packed with nutrients and protein. It also has a little bit of a sweeter taste.
  • Gluten-free oat flour- Oat flour is excellent for baking because it helps get the fluffy texture. 
  • Baking soda
  • Baking powder 
  • Salt

Wet Ingredients 

  • Coconut oil– Coconut oil is good for blood sugar, energy levels, digestion, and more. An excellent substitute for butter when baking
  • Butter– Butter makes these cookies a little moister. However, you can substitute it for more coconut oil if you do not want to use butter. 
  • Coconut sugar– Coconut sugar is a healthier sugar alternative with healthy fats and fewer grams of sugar per serving than other sugars. 
  • Maple syrup When selecting your maple syrup, it is important to look at the ingredients list and make sure there are no added sugars, preservatives, or additives. Don’t worry; it is still delicious and sweet!
  • Maple extract- I just found out this exists, and it is a game-changer! It brings out the maple flavor more. I used Olive Nation’s maple extract. Click here to get it on Amazon.
  • Vanilla extract

Additional Ingredients 

  • Walnuts– You can sub whatever nuts you prefer or no nuts. I used walnuts because they pair so nicely with maple.  

How do I make maple walnut cookies?

Begin by preheating the oven to 350°F and line a baking sheet with parchment paper. 

In a mixing bowl, add almond flour, oat flour, baking powder, baking soda, and salt. Mix the ingredients. Next, melt the coconut oil in the microwave and then chill for 5 minutes in the freezer. If it is too warm, it will not bake correctly. In another bowl, mix coconut sugar, melted and cooled coconut oil, room temperature butter, maple syrup, maple extract, and vanilla extract.  

Add the dry ingredients into the wet ingredients and stir until all of the ingredients are thoroughly combined, then fold in the walnuts. 

Once all the ingredients are evenly mixed, using the tablespoon, scoop the cookie dough on a baking sheet lined with parchment paper. Put in the oven and bake for 10 – 12 minutes.

Is maple extract worth it?

Yes! Maple extract is a game-changer in baked goods. It really makes the maple flavor pop and adds so much flavor.  I highly recommend it.
