Low Carb Pizza Soup

Cozy up with this Low Carb Pizza Soup! This one-pot meal is packed with veggies and tastes just like pizza! This soup will be your new favorite.

How to Make Pizza Soup

In a large dutch oven or pot, heat 1/2 tbsp of avocado oil over medium heat. Once hot, add a minced shallot and sauté for two to three minutes. After that, add in the ground sausage and break into crumbles. Cook until the sausage is no longer pink and parts are golden brown. Add in garlic, 1 tbsp Italian seasoning, salt, and pepper.  Sauté for another minute or two. Then add mushrooms, zucchini, red bell pepper, onion, and cherry tomatoes. Sprinkle with 1/2 tbsp of avocado oil and 1 tbsp of Italian seasoning.  Mix everything together. Cover and cook for 10 minutes (stirring occasionally). After that, add in diced tomatoes, tomato paste, and beef broth. Mix everything together and bring to a boil. Once boiling, turn the temperature down to low.  Mix in the spinach, cream cheese, and parmesan cheese. Cover and cook for another 5-10 minutes. Enjoy with your favorite pizza toppings (i.e. parmesan cheese, shredded mozzarella, and/or red pepper flakes).

Ingredients

  • 1 tbsp avocado oil
  • 1 shallot minced
  • 16 oz ground sausage
  • 2 garlic cloves minced
  • 1 zucchini sliced and then diced
  • ½ yellow onion diced
  • 8 oz mushrooms sliced
  • 1 red bell pepper sliced and diced
  • 1/2 cup cherry tomatoes sliced in half
  • 15 oz diced tomatoes with the juice
  • 6 oz tomato paste 1 can
  • 32 oz beef broth
  • 3 cup spinach
  • 4 oz cream cheese 1/2 the package
  • ¼ cup grated parmesan cheese
  • 2 tbsp Italian seasoning
  • salt to taste
  • pepper to taste
