Low Carb Keto Ramen
Are you looking for a warm dinner that tastes just like one of your favorite comfort foods? This Low Carb Keto Ramen is something you need to try! The soft boiled eggs are always my favorite part of ramen, and these were just as good as the ones you get out.
What are shirataki noodles?
Shirataki noodles are made from the root of the konjac plant. They are popular in Asian cuisine. They have almost zero calories and zero carbs. I was pleasantly surprised at the way the texture was just like traditional ramen noodles.
Ingredients
- 2 7 oz bags of shirataki noodles
- 1 tsp avocado oil
- 1 carton of beef broth
- 3 tsp mirin
- 3 tsp soy sauce
- 1 1/2 tsp minced ginger
- 1 tsp minced garlic
- 1 shallot- minced
- 3 baby bok choy
- 2 cups shiitake mushroom
- 10 oz steak- any cut will work I used ribeye
- 1 tbsp green onion- chopped
- salt and pepper to taste
Soft Boiled Eggs
- 2 eggs
- 1/4 cup mirin
- 1/4 cup soy sauce
How do I make low carb keto ramen?
Prepare the soft boiled eggs 8 – 24 hours before you are having your ramen. Boil the eggs for 6 minutes. Peel and place in a container with mirin and soy sauce- for the best results, let the eggs soak for 24 hours.
Making the broth
Set a large saucepan over medium heat. Add avocado oil, minced shallots, fresh garlic, and ginger. Sautee for two minutes and then add the beef broth and mix everything together. Bring to a boil. Once boiled, add sliced baby bok choy, and sliced mushrooms. Mix everything together. Cover and simmer for 30 minutes to an hour.
While the broth is simmering, prepare the shirataki noodles and steak.
How do I cook shirataki noodles?
Boil a pot of water and then rinse the noodles under cool water. Next, add noodles to the boiling water for three minutes. Then, drain the noodles. After that, transfer the noodles back into the pot and fry for 10 minutes, stirring constantly with tongs. Do not add any liquid or oils. This will remove the odor that the noodles have and dry them appropriately.
Salt and pepper the steak and put it on a cast iron skillet until cooked in your desired manner.
Put the ramen together!
Place cooked shirataki noodles in a bowl. After that, add veggies and broth, sliced steak, halved soft boiled egg, and chopped green onion.
