Loaded Sweet Potato Nachos
Superbowl Sunday is right around the corner and that means it is time to plan out all of your favorite football treats. These Loaded Sweet Potato Nachos are a healthy appetizer that your entire team will love. Made with homemade sweet potato chips, seasoned veggies, and cheddar cheese, they are a healthier twist on traditional nachos.
Ingredients needed for these nachos
- Sweet Potatoes
- Yellow Onion
- Peppers
- Shredded Cheese (I used Trader Joe’s Mexican Blend)
- Avocado Oil
- Nonstick Spray
- Salt and Pepper
- Homemade Fajita Seasoning
Optional Dips and Toppings:
- Fresh Lime Juice
- Salsa
- Guacamole
- Sour Cream
How do I make sweet potatoes nachos?
Preheat the oven to 400F, line two baking sheets with aluminum foil, and spray with a nonstick spray.
Next, slice the sweet potatoes into 1/4 inch rounds and arrange them into a single layer on the baking sheets. Sprinkle with salt and pepper and bake for 20 minutes. Then flip, sprinkle with salt and pepper, and bake for another 20 minutes. If you want them to be a little crispier, put them on broil for one minute. Make sure you watch them so they do not burn!
While the sweet potato chips are cooking, prepare the veggies. Heat a skillet over medium heat with avocado oil. Slice yellow onion and peppers into strips and add them into the heated skillet. Saute for 15 minutes and then mix in the fajita seasoning. Put the veggies on simmer while the sweet potato chips are still cooking. Turn the oven down to 350F
Once the sweet potato chips are finished cooking, arrange a single layer onto the square 8 inch casserole dish. Then add a layer of veggies and cheese. Repeat until all of your ingredients are gone. Cover with aluminum foil and bake at 350F for 20 minutes. Remove aluminum foil and broil for one minute. Serve with fresh lime, salsa, guacamole, and/or sour cream. Enjoy!

- 2 peppers any color works
- 1 tbsp avocado oil sub olive oil
- 1½ cups shredded cheese I used Trader Joe's Mexican Blend
- 2 tbsp homemade fajita season
- salt and pepper to taste

I love this fajita seasoning and always have it on hand. I make a big batch of it using the measurements below. If you want to make enough for this recipe sub tablespoon for teaspoon.
Homemade Fajita Seasoning
Ingredients
- 3 tbsp chili powder
- 2 tbsp ground cumin
- 1 tbsp paprika
- 2 tbsp garlic powder
- ½ tbsp salt
- ½ tbsp pepper
Instructions
- Add all ingredients into a jar and shake. Store in an airtight container.
