Lemon Pepper Chicken Thighs

These Lemon Pepper Chicken Thighs are crispy on the outside and juicy and amazingly tender on the inside. The recipe is super easy to make and the only cookware you need is an ovenproof skillet. Pair it with your favorite veggies and you have an easy and delicious weeknight meal.

Ingredients needed

  • Bone-in, skin-on chicken thighs- The skin-on is crucial because the skin will become the crispy part.
  • Butter- To sear the chicken thighs in.
  • Seasonings- Salt, pepper, and lemon pepper seasoning.
  • Garlic
  • Fresh Lemon Juice
  • Fresh rosemary- Using fresh rosemary will add a perfect herby taste to the chicken.

How to make Lemon Pepper Chicken Thighs

Preheat the oven to 400F. Season chicken thighs with salt, pepper, and lemon pepper seasoning. Melt one tablespoon of butter in a large ovenproof (cast iron is what I used) skillet over medium heat. Add chicken, skin down, and sear the skin-on side until golden brown- about 5 minutes. After that, remove the chicken thighs and set them aside.  Add garlic, stir until fragrant then add lemon juice and rosemary. Turn the heat down to low. Add the chicken back to the skillet and coat with the lemon sauce. Bake for 25 minutes or until chicken is fully cooked. Serve it with your favorite sides. Enjoy!

  • 2 tbsp unsalted butter
  • salt to taste
  • pepper to taste
  • 1 tbsp lemon pepper seasoning
  • 1 lemon juiced
  • 1 tsp garlic
  • 1 tbsp fresh rosemary

Instructions

  • Preheat the oven to 400F.
  • Season chicken thighs with salt, pepper, and lemon pepper seasoning.
