Jalapeño Honey Lime Grilled Chicken Tacos
These Jalapeno Honey Lime Grilled Chicken Tacos have the perfect balance of spicy and sweet. Topped with Trader Joe’s Island Salsa and sautéed peppers and onions, it is the perfect summer dinner!
The jalapeño honey lime chicken in these tacos is a Taco Tuesday game changer! I love this chicken and oftentimes eat just the chicken. I recently tried it in a taco and it might be my new go-to taco!
Ingredients
Jalapeño Honey Lime Chicken
- Chicken breast
- Olive oil
- Honey
- Lime juice
- Crushed garlic
- Salt
- Pepper
Sauteed Peppers and Onions
- Peppers
- Red onion
- Olive oil
- Crushed garlic
- Jalapeño
- Salt
- Pepper
Additional Ingredients
- Corn tortillas- My favorite is the Corn and Wheat Tortillas from Trader Joe’s
- Trader Joe’s Island Salsa (or your favorite salsa!) The Island Salsa goes very well with the Jalapeño Honey Lime Chicken!
- Any taco toppings you want!
- Homemade Guac
- Sour Cream
- Cheese
How do I make these tacos?
Begin by making the jalapeño honey lime marinade for the chicken.
Grate a jalapeño into small pieces. If you do not have a cheese grater, you can cut the jalapenos into small pieces.
Next, in a ziplock bag add chicken breast, olive oil, honey, lime juice, crushed garlic, grated jalapeño, salt, and pepper. Shake the zip lock bag to make sure the chicken gets evenly coated. Place in the refrigerator for at least 30 minutes. The longer the better!
Once the chicken is marinated, place each piece of chicken on the grill (or skillet over medium heat) and cook each side for 5 minutes.
While the chicken is cooking, cook the sauteed peppers and onions. Begin by slicing the peppers and onions into strips. Heat a saucepan over medium heat, add olive oil, crushed garlic, sliced peppers, and onions, salt, and pepper. Cover and cook for ten minutes stirring occasionally.
Building your tacos!
Warm the corn tortillas quickly on a grill or in the microwave. Slice the cooked chicken into thin strips and place onto the warm tortillas. Add sauteed peppers and onions, Trader Joe’s Island Salas (or your favorite salsa), and any other toppings you would like!
