Italian Farro Salad with Italian Vinaigrette
This Italian Farro Salad with Italian Vinaigrette is an easy dish to make that pairs well with your favorite entree or served as a meal. It’s heartier than a Caprese salad due to the protein in the farro and leaves you feeling full.
Ingredients
- Farro
- Feta cheese
- Roasted red peppers
- Tomatoes
- Cucumber
- Spring mix
- Italian Vinaigrette Dressing
- olive oil, rice wine vinegar, white wine vinegar, honey, dijion mustard, dried oregano, black pepper, and salt
The Benefits of Farro in a Salad
Farro is a whole grain that is full of nutrients and protein. It is a good source of fiber and with about 8 grams of protein per serving it will leave you full longer. I love adding farro into my salads. It makes the salad heartier and more of meal!
How to make Italian Farro Salad with Italian Vinaigrette
In a salad bowl combine cooked farro, feta cheese, roasted red peppers, cherry tomatoes cut in half, and slice and diced cucumber. I used Trader Joe’s Feta Cheese with Mediterranean Herbs. The Mediterranean herbs add a wonderful flavor to this dish.
Next, toss the Italian Vinaigrette Dressing (see instructions below).
Lastly, add two handfuls of spring mix and toss again.
How to make the Italian Vinaigrette Dressing
In a jar or salad dressing shaker (I linked the one I used here) add olive oil, rice wine vinegar, white wine vinegar, dijon mustard, honey, dried oregano, black pepper, and salt. Next, shake the jar or container until all ingredients are mixed together thoroughly. There you have it homemade Italian Vinaigrette Dressing!

Instructions
Italian Vinaigrette Dressing
- In a jar or salad dressing shaker add olive oil, rice wine vinegar, white wine vinegar, dijon mustard, honey, dried oregano, black pepper, and salt.
- Next, shake the jar or container until all ingredients are mixed together thoroughly.
- Make sure you shake it again before using it because the ingredients will set.
Building the Salad
- Cook the farro according to directions on the bag.
- Next, in a salad bowl combine cooked farro, feta cheese, sliced roasted red peppers, cherry tomatoes cut in half, and slice and diced cucumber.
- Add the desired amount of vinaigrette to the topping and toss until they are all coated.
- After that, add spring mix and toss again.
