Herb Roasted Acorn Squash
This Herb Roasted Acorn Squash is a perfect side dish to make this fall. All you need is acorn squash, fresh herbs, butter, and parmesan cheese.
Ingredients:
1 large acorn squash
1/2 cup grated parmesan cheese
2 tablespoons of butter
2 tablespoons of fresh herbs- I used sage, thyme, rosemary, and oregano
1/2 tablespoon of olive oil
salt and pepper to taste
How to make this acorn squash
Preheat the oven to 400F and line a baking sheet with nonstick aluminum foil.
Slice the acorn squash in half and then scoop out the seeds. Cut the squash into half-inch thick pieces.
In a large mixing bowl, melt the butter in the microwave for one minute. Then add fresh herbs, salt, pepper, and olive oil. After that, add the sliced acorn squash to the bowl and toss until all slices are evenly coated.
Bake for 20- 25 minutes or until golden brown.
