Healthy Raspberry Chocolate Bars

Healthy Raspberry Chocolate Bars make for the perfect snack and/ or dessert! They are made with old-fashioned oats, oat flour, fresh raspberries, and sweetened with coconut sugar.

I love raspberry and chocolate together! Sometimes, I put chocolate chips into raspberries and eat that for dessert. If you have not tried that yet I highly recommend it! This bar reminds me of that. With each bite you get the taste of fresh raspberries and chocolate along with a chewy oat cookie base.

Ingredients

  • Oat flour- You can make your own oat flour by blending old fashioned oats in the blender!
  • Old fashioned oats
  • Baking soda
  • Salt
  • Sugar
  • Coconut sugar
  • Egg
  • Coconut Oil
  • Semi sweet chocolate chips
  • Fresh raspberries

 

How do I make these bars?

Begin my preheating the oven to 350 F and lining a 8in by 4in loft pan with parchment paper.

After that, in a mixing bowl, mix oat flour, old fashioned oats, baking soda, salt, and coconut sugar. Next, melt the coconut oil in the microwave and then chill for 5 minutes in the freezer. If it is too warm, it will not bake correctly. In another bowl, mix coconut sugar and the egg. 

Add the dry ingredients into the wet ingredients and stir until all of the ingredients are thoroughly combined. Remove 1/3 of the dough to use as the crumble. Then fold in the chocolate chips. 

Press 2/3 of the dough into the bottom of the 8in by 4in loaf pan until evenly spread. Bake on 350 F for 25 minuets. After that, put a layer of fresh raspberries topped with pieces of the dough and chocolate chips. Bake for another 10 minutes. 

Let the bars cool completely before you slice them.

How to store these healthy raspberry chocolate bars?

Store in an airtight container in the fridge for up to one week.
