Healthy Pumpkin Muffins

These sugar-free healthy pumpkin muffins are SO easy to make and are delicious. They are a great healthy breakfast option to meal prep this weekend! 
Servings: 8 muffins

Ingredients

  • 1 cup pumpkin puree
  • 3 eggs
  • cups almond flour
  • 2 scoops vanilla protein powder I used Primal Kitchen Vanilla Collagen Fuel
  • 1 tbsp pumpkin pie spice
  • 1 tsp baking soda
  • ½ tsp salt
  • tsp vanilla extract
  • ½ tsp maple extract

Instructions

  • in a medium size mixing bowl, mix all of the ingredients together.
  • Using 1/4 cup measuring cup, scoop batter into a greased muffin tin or cupcake liners.
  • Bake at 350F for 20 minutes.
