Healthy Pumpkin Muffins
These sugar-free healthy pumpkin muffins are SO easy to make and are delicious. They are a great healthy breakfast option to meal prep this weekend!
Servings: 8 muffins
Ingredients
- 1 cup pumpkin puree
- 3 eggs
- ⅔ cups almond flour
- 2 scoops vanilla protein powder I used Primal Kitchen Vanilla Collagen Fuel
- 1 tbsp pumpkin pie spice
- 1 tsp baking soda
- ½ tsp salt
- 1½ tsp vanilla extract
- ½ tsp maple extract
Instructions
- in a medium size mixing bowl, mix all of the ingredients together.
- Using 1/4 cup measuring cup, scoop batter into a greased muffin tin or cupcake liners.
- Bake at 350F for 20 minutes.
