Healthy Oatmeal Raisin Cookies

These Healthy Oatmeal Raisin Cookies are one of my favorite cookies!  They are gluten-free and sweetened with coconut sugar and maple syrup. They are a yummy and filling afternoon pick me up. 

Ingredients Used to Make Healthy Oatmeal Raisin Cookies 

Dry Ingredients:

  • Rolled Oats- Organic, all-natural rolled oats are a great ingredient to use. Oats are good for your cholesterol and full of fiber and antioxidants. Oats also help control blood sugar levels.
  • Almond Flour– Almond Flour is an excellent alternative to wheat flour. It is low and carbs and packed with nutrients and protein.
  • Cinnamon
  • Baking Soda
  • Salt

Wet Ingredients: 

  • Coconut oil- Coconut oil is a healthy alternative to vegetable oil when cooking. 
  • Butter: I added a little bit of butter to this recipe to give it the buttery taste that everyone loves in cookies. However, if you want to make, it dairy-free substitute the butter for more coconut oil or applesauce. 
  • Coconut Sugar: Coconut sugar is a healthier sugar alternative that has healthy fats and has fewer grams of sugar per serving than other sugars. 
  • Unsweetened Applesauce: Applesauce is a great fat-replacer in a lot of baked goods. It adds fiber and reduces the number of calories.
  • Maple Syrup: When selecting your maple syrup, it is important to look at the ingredients list and make sure there are no added sugars, preservatives, or additives. Don’t worry. It is still delicious and sweet!
  • Egg
  • Vanilla Extract 
  • Raisins 

How to Make Healthy Oatmeal Raisin Cookies

Begin by preheating the oven to 350°F and prepare a baking sheet by lining it with parchment paper.

In a mixing bowl, add rolled oats, almond flour, cinnamon, baking soda, and salt. Mix the ingredients. Next, prepare the wet ingredients. Begin by melting the coconut oil in the microwave and then chill for 5 minutes in the freezer. If it is too warm, it will not bake correctly. After that, in a bigger mixing bowl, add melted and cooled coconut oil, softened butter, and coconut sugar. Cream together using a hand mixer for about two minutes. Next, add in the egg, unsweetened applesauce, and vanilla extract and mix together. After that, slowly add the dry ingredients to the wet and mix thoroughly.

Once all the ingredients are evenly mixed fold in the raisins. After that, using a tablespoon, scoop the cookie dough on a baking sheet lined with parchment paper. Put in the oven and bake for 10 – 12 minutes. Let the cookies cool for half an hour before enjoying them.
