Packed with healthy ingredients:

Almond Flour: I love baking with almond flour. It is low carb, packed with nutrients and protein. It also has a little bit sweeter of a taste.

Greek Yogurt:  Greek yogurt adds moisture to your muffins and so much protein (which keeps you full longer)! Greek yogurt is also full of probiotics and potassium.

Fruit and Vegetables: These muffins have fresh fruit and vegetables in them as well. Grated carts and apples provide amazing flavor and a sneaky way to get your fruits and veggies in.

Eggs: More protein! You need 2 large eggs for this recipe. Can’t do eggs? Try swapping them with 2 flax eggs.

Packed with Flavor:

Cinnamon and Ginger: Two of my favorite spices. They remind me of the holidays but I like to eat it any time of year. These two spices add sweetness to the muffins without too much sugar. Power duo!

Maple Syrup: Maple Syrup is a natural sweetener that goes adds just the right about of sweetness to the muffins.

Coconut Sugar: Coconut sugar is another natural sweetener that is not processed. Perfect to sprinkle on top for a little bit extra sweetness on everyone’s favorite part of a muffin.

How do I make these amazing Healthy Morning Glory Muffins?

It is super easy to make Healthy Morning Glory Muffins!

Begin by mixing all of the dry ingredients into a bowl (almond flour, whole wheat flour, cinnamon, ground ginger, baking powder, and baking soda).

I wanted the carrots and apples to be in small pieces, so I used a cheese grater and grated them. If you prefer to chop the apples and carrots into small pieces, that works too! Peel and grate/chop the carrots to fill one cup. Grate/chop a cup of apples as well.

After that, In a smaller bowl, combine the wet ingredients (grated apples and carrots, eggs, greek yogurt, vanilla). Next, mix them. Then, combine the wet ingredients into the dry. Fold in the raisins and pecans. Add one tablespoon of coconut oil and mix it in thoroughly.

Add to the muffin tin- bake on 350°F for 12 minutes. 

Sprinkle coconut sugar on top and bake for another 6 minutes (do the knife test and to make sure they cooked!). Enjoy the muffins alone or top with your favorite toppings!

What can I top my muffins with?

Almond Butter: One of my favorite toppings! Creamy Almond Butter from Trader Joes is my go-to. I always get the salted for a touch of savory.

Nut Butter: Any nut butter would go great with these muffins!

Honey: I use Stockins Alfalfa Raw Honey. It is a creamy, smooth, naturally sweet topping. It goes wonderfully with the Healthy Morning Glory Muffins.

Butter: My fiancé cut his in half, put it in the microwave for 30 seconds, and put butter on it. He loved it!


How do I store my Healthy Morning Glory Muffins?

Store in an airtight container in the fridge for up to four days.

Freeze for up to 3 months. To thaw put in the microwave for 30 seconds.

  • 1 cup almond flour
  • 1 cup whole wheat flour
  • 3 tsp cinnamon
  • 1 tsp ground ginger
  • 1 ½ tsp baking powder
  • 1 tsp baking soda
  • 1 cup carrots peeled and grated
  • 1 cup apples grated
  • 2 eggs
  • ½ cup greek yogurt
  • ¼ cup maple syrup
  • 1 tsp vanilla
  • 1 tbsp melted coconut oil
  • ¼ cup chopped pecans
  • ¼ cup raisins
  • ¼ tsp coconut sugar to sprinkle


  • Preheat the oven to 350 °F, and coat muffin tin with nonstick spray.
  • In a large bowl, whisk together almond flour, whole wheat flour, cinnamon, ground ginger, baking soda, and baking powder.
  • Peel and grate enough carrots to make 1 cup.
  • Grate enough apples to make 1 cup.
  • In a medium-sized bowl, combine grated carrots and apples, eggs, greek yogurt, vanilla, and maple syrup.
  • Combine the wet ingredients into the large bowl with the dry ingredients. Mix together.
  • Add 1 tbsp of melted coconut oil and mix it together.
  • Fold in pecans and raisins.
  • Evenly distribute mixture into 12 muffin cups (lined or sprayed with pam).
  • Bake for 12 minutes at 350°F.
  • Sprinkle coconut sugar on each on.
  • Bake for another 6 minutes at 350°F.
