Ingredients Used to Make Healthy Lemon Poppy Seed Cookies

Dry Ingredients:

  • Almond Flour– Almond Flour is an excellent alternative to wheat flour. It is low and carbs and packed with nutrients and protein.
  • Baking Soda:  For this recipe, you want to use baking soda and not baking powder because the acid in the baking soda mixed with the lemon will cause the cookies to rise and be fluffy. 
  • Salt
  • Poppy Seeds

Wet Ingredients: 

  • Coconut oil- Coconut oil is a healthy alternative to vegetable oil when cooking. 
  • Butter: I added a little bit of butter to this recipe to give it the buttery takes that everyone loves in cookies. However, if you want to make, it dairy-free substitute the butter for more coconut oil. 
  • Coconut Sugar: Coconut sugar is a healthier sugar alternative that has healthy fats and has fewer grams of sugar per serving than other sugars. 
  • Egg: The egg will hold the cookie together.
  • Fresh Lemon Juice

How to Make Healthy Lemon Poppy Seed Cookies

Begin by preheating the oven to 350°F and prepare a baking sheet by lining it with parchment paper.

In a mixing bowl, add almond flour, baking soda, salt, and poppy seeds. Mix the ingredients. Next, you want to prepare the wet ingredients. Begin by melting the coconut oil in the microwave and then chill for 5 minutes in the freezer. If it is too warm, it will not bake correctly. After that, in a bigger mixing bowl, add melted and cooled coconut oil, softened butter, and coconut sugar. Cream together using a hand mixer for about two minutes. Next, add in the egg, fresh lemon juice, lemon zest, and vanilla extract and mix together. After that, slowly add the dry ingredients to the wet and mix thoroughly.

Once all the ingredients are evenly mixed together using the tablespoon, scoop the cookie dough on a baking sheet lined with parchment paper. Put in the oven and bake for 10 – 12 minutes. Prepare the lemon glaze while the cookies are cooking.

How to Make the Lemon Glaze for Healthy Lemon Poppy Seed Cookies

In a small bowl, add powdered sugar and fresh lemon juice. Mix together using a fork.

Let cookies cool for about 15 minutes before drizzling with the glaze. For best drizzle results, fill a spoon with the glaze and slowly go over the cookies.
