Healthy Jalapeño Cornbread

How to make Healthy Jalapeno Cornbread: 

Easy, quick, and nutritious recipes are my favorite. Healthy jalapeno cornbread fits right into that category. 

In a mixing bowl, combine wet ingredients. Traditional cornbread calls for oil to it gets its moisture. In this recipe, you swap the oil for greek yogurt. The greek yogurt provides moisture and a little bit of protein as well!

In another bowl, combine and mix together dry ingredients. After that, combine the wet to the dry and mix thoroughly.

Pour cornbread mixture into a buttered pan. Add sliced jalapenos on top—Bake on 350 for 18-20 min. Do the knife test and make sure nothing comes off. 

Now, time top that cornbread!

Topping the cornbread:

Honey!! Honey is one of my favorite toppings! It is a natural sweeter that pairs perfectly with cornbread. If you drizzle it on while the cornbread is still warm, it absorbs perfectly into the bread and melts in your mouth. I used one of my favorite honey, Tupelo Honey, from the Savannah Bee Company.  This tupelo honey has a buttery and sweet taste.

Jalapenos- if you love spicy slice up some jalapenos (leave the seeds in for extra spice) and bake them on.

What to pair the cornbread with:

Cornbread and Chili

Chili: On a cold winter night, there is nothing better than cornbread and chili by the fire. The jalapeno cornbread compliments the spices in the chili perfectly!

Side for a BBQ: The sweetness of barbeque sauce and cornbread is a perfect match. Pair with BBQ chicken or pulled pork.

Healthy Jalapeño Cornbread

Wet Ingredients

  • 1 tbsp melted butter
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 tbsp olive oil
  • 2 tbsp water
  • 3 tbsp honey
  • ¼ cup milk milk of choice

Dry Ingredients

  • cup cornmeal
  • ½ cup whole wheat flour
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 tbsp sugar

Additional Ingredients

  • 1 cup frozen corn
  • 1 jalapeno
  • 2 tbsp honey use as a topping


  • Preheat oven to 400°F.
  • In a large mixing bowl, combine dry ingredients (cornmeal, whole wheat flour, baking powder, and sugar) and mix together.
  • in a medium mixing bowl, combine wet ingredients (melted butter, large egg, vanilla extract, olive oil, water, honey, and milk) and mix together.
  • Slowly combine wet ingredients into dry ingredients and mix together.
  • Next you want to fold in the frozen corn.
  • Pour batter into a sprayed of buttered pan.
  • Add sliced jalapenos on top.
  • Bake on 440°F for 20 to 25 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
