Only 6 Ingredients in Healthier Reese’s Eggs

  1. All-Natural Peanut Butter– All-natural peanut butter has very few ingredients and no added sugars or chemicals.
  2. Almond Flour– Almond Flour is a great alternative to wheat flour. It is low and carbs and packed with nutrients and protein.
  3. All-Natual Honey– I love honey because it is a natural sweetener and a great alternative to granulated sugar.
  4. Vanilla Extract
  5. Semi-sweet Chocolate Chips
  6. Coconut Oil- Store-bought Reese’s Eggs are made with vegetable oil. This recipe replaced vegetable oil for coconut oil which is good for blood sugar, energy levels, digestion, and more

How to Make Healthier Reese’s Eggs

In a medium-sized mixing bowl, add peanut butter, vanilla extract, and melted honey. Make sure you melt the honey, so it is a liquid and will evenly mix in with the peanut butter and vanilla extract.

Next, slowly add the almond flour to the peanut butter mixture. Fold together until evenly distributed. After that, using a tablespoon, scoop the peanut butter and almond flour mixture onto parchment paper and shape into eggs. Next, transfer to the freezer for 30 minutes.

Right before you take the peanut butter eggs out of the freezer, make the chocolate shell. In a microwave-safe bowl, add semi-sweet chocolate chips and coconut oil—place in the microwave for 30 seconds. Mix until all the chocolate melts. Now it is time to coat the peanut butter egg in chocolate!

Place one peanut butter egg at a time into the melted chocolate. Coat all of the sides and transfer it back to the parchment paper. Next, place the chocolate-coated eggs back in the freezer for 10 minutes for the chocolate shell to harden.

Lastly, enjoy or store in an airtight container in the fridge.

Ingredients

  • ¾ cup creamy peanut butter
  • tbsp honey melted
  • ½ cup almond flour
  • ½ tsp vanilla extract
  • ½ cup semi-sweet chocolate
  • 1 tsp coconut oil

Instructions

  • in a medium-sized mixing bowl, mix peanut butter, vanilla extract, melted honey together.
  • Next, slowly add almond flour to the peanut butter mixture and combine thoroughly.
  • Using a tablespoon, scoop the peanut butter and almond flour mixture onto parchment paper and shape into eggs.
  • Transfer to the freezer for half an hour.
  • Combine semi-sweet chocolate and coconut oil in a microwave-safe bowl.
  • Heat for 30 seconds.
  • Mix together until all of the chocolate is melted.
  • Using a fork, place the frozen peanut butter egg in the chocolate. Make sure all sides are evenly coated.
  • Transfer back to the parchment paper.
  • Place in the freezer for 10 minutes for chocolate to harden.
  • Enjoy!
