Healthier Peanut Butter Chocolate Chip Cookies
These healthier peanut butter chocolate chip cookies are a batch baked in heaven! They are the perfect combination of peanut butter and chocolate to satisfy your sweet tooth. They are made with almond flour, whole wheat flour, coconut sugar, all-natural peanut butter, and coconut oil.

Almond Flour: I love baking with almond flour. It is low in carbs and packed with nutrients and protein. It also has a little bit of a sweeter taste.
Whole Wheat Flour: Whole wheat flour has more nutrients and protein than white flour. If you want to make these cookies gluten-free, sub whole wheat flour for more almond flour.

All-Natural Peanut Butter– All-natural peanut butter has very few ingredients and no added sugars or chemicals.
Coconut Sugar: Coconut sugar is a healthier sugar alternative that has healthy fats and fewer grams of sugar per serving than other sugars.
Coconut Oil- Coconut oil is good for blood sugar, energy levels, digestion, and more. An excellent substitute for butter when baking
Eggs: You need 2 large eggs for this recipe.

Peanuts- Peanuts are an optional ingredient to add to the cookies.
How to make Healthier Peanut Butter Chocolate Chip Cookies
Begin by preheating the oven to 350°F and line a baking sheet with parchment paper.
In a mixing bowl, mix almond flour, whole wheat flour, baking soda, and salt. Next, melt the coconut oil in the microwave and chill for 5 minutes in the freezer. If it is too warm, it will not bake correctly. After that, in a bigger mixing bowl, add all-natural peanut butter, melted and cooled coconut oil, coconut sugar, eggs, and vanilla extract. Cream together using a hand mixer for about two minutes. Then slowly add the dry ingredients to the wet and mix thoroughly. Next, fold in semi-sweet chocolate chips and peanuts.
Once all the ingredients are evenly mixed together, using the tablespoon, scoop the cookie dough on a baking sheet lined with parchment paper. Put in the oven and bake for 10 – 12 minutes.





Make These Cookies Slice and Bake Style
Make the cookie dough and then roll it into a cylinder shape and wrap in saran wrap. Place in the refrigerator for at least two hours.
When you are ready to bake the cookies, unwrap the saran wrap and slice the cookies into slices about half an inch thick. Place the cookie slices on the baking sheet lined with parchment paper and bake for 10 – 12 minutes.
The slice and bake style cookies will come out bigger and not as round. They taste the same, they have a different look, and it is an easy way to store leftover cookie dough to make cookies later.
