How to Make a Greek Yogurt Chicken Salad Sandwich
Begin by making the chicken salad. To make shredded chicken fill a medium-size saucepan with water and bring it to a boil. Once the water is boiling, add the chicken breast. Cook the chicken for 10 minutes or until it is fully cooked. You will know the chicken is ready when it breaks apart when you put a fork in it. Remove the chicken and place it in a medium-sized mixing bowl. Using two forks, pull the chicken apart. After that, in a small bowl, mix together nonfat Greek yogurt, lemon juice, dijon mustard, garlic powder, thyme, salt, and pepper. Pour on the shredded chicken and fold together. Next, fold in sliced grapes, parsley, and celery.
