Fall Quinoa Salad

Trader Joe’s has done it again! Their Holiday Vegetable Hash makes for great fall salad ingredients. This Fall Quinoa Salad with homemade maple balsamic takes less than 20 minutes to put together and is a perfect hearty salad to meal prep.

Ingreidents:

  • Trader Joe’s Holiday Vegetable Hash: This hash consists of fresh butternut squash, sweet potato, red onion, celery, parsley, sage, and rosemary. It is already cut up and has a perfect ratio.
  • Quinoa: Quinoa is a great plant-based protein to add to salads. It is super easy to cook too!
  • Goat Cheese: I used Trader Joe’s Pumpkin Spice goat cheese but regular goat cheese works too!
  • Mixed Greens
  • Olive Oil
  • Salt and Pepper

How to make this fall salad

This salad is SO easy to make thanks to Trader Joe’s Holiday Vegetable Hash. Everything is already precut and the ratio is great! You will put this salad together in less than 20 minutes. The perfect meal to make during this busy holiday season.

Begin by making the quinoa according to the packing.

While the quinoa is cooking, heat a skillet over medium heat with 1 tablespoon of olive oil. Add the Holiday Hash and cover. Saute for 10 minutes, stirring frequently.

While that is cooking make my homemade maple balsamic dressing.

Put the salad together. On top of a bed of mixed greens, add 1/3 cup of cooked quinoa, 2/3 cup of cooked vegetable hash, and 1 tablespoon of goat cheese. Add your desired amount of maple balsamic dressing. Mix everything together and enjoy!

  • 1 package Trader Joe's Holiday Vegetable Hash
  • 1 tbsp olive oil
  • 1 bag mixed greens
  • 4 tbsp crumbled goat cheese
