Easy Chicken Pad Thai
This Chicken Pad Thai is so easy to make and full of a variety of flavors. Your family will think you ordered takeout! It is dressed in a homemade peanut sauce that is not only easy to make but delicious. Enjoy!
Pad thai is one of my favorite dinners to order in. There is nothing better than a big hot plate of rice noodles, chicken, and veggies. Though I always assumed I could never make it taste the same as great carryout restaurants do…. I was wrong! Making it was so much easier than I thought and you can modify it to your taste. My recipe probably has more veggies than your local Thai restaurant but your version doesn’t have to!
What ingredients do you need to make this pad thai?
Peanut Sauce
- All-Natural Peanut Butter
- Sesame Oil
- Coconut Aminos
- Soy Sauce
- Fish Sauce
- Rice Vinegar
- Sriracha
- Ground Ginger
Pad Thai Ingredients
- Vegetable Stir Fry from Trader Joe’s
- If you do not have a Trader Joe’s add:
- 2 Red Bell Peppers (sliced thin)
- 4 Baby Corn
- 1/2 cup of Mushrooms
- 1/3 cup Snow Peas
- 1 Red Onion (sliced thin)
- 1/2 cup Broccoli
- If you do not have a Trader Joe’s add:
- Avocado Oil
- Chicken
- Rice Noodles
- Crushed Peanuts
- Crushed Red Pepper Flakes
- Lime
How do I make this pad thai?
First, prepare the rice noodles according to the instructions on the label.
After that, make the peanut sauce. In a small mixing bowl add all-natural peanut butter, sesame oil, coconut aminos, soy sauce, fish sauce, rice vinegar, sriracha, and ground ginger. Whisk everything together and set aside.
Next, dice the chicken. Heat a large skillet or pot over medium heat with two tablespoons of avocado oil. Once hot, add chicken and cook for 5-6 minutes or until cooked. Remove the chicken. Add two more tablespoons of avocado oil to the pan. Add Trader Joe’s Asian Style Vegetable Stir Fry or vegetables (listed above). Sauté for about ten minutes, stirring frequently. Make sure the veggies do not get too mushy!
Next, add chicken, rice noodles, and homemade peanut sauce to the vegetable pan. Mix everything together. Top with fresh lime juice, crushed red pepper flakes, and a little more sriracha if you like that extra kick!
