Curry Chicken Salad

Curry Chicken Salad Ingredients 

  • Skinless chicken breast: The best way to get shredded chicken is to boil it. 
  • Nonfat Greek yogurt: Greek yogurt will be the base for the curry dressing. 
  • Mayonnaise and sour cream:  These will help thicken the dressing. 
  • Lemon juice: A little bit of tang to go with the curry. 
  • Celery: The perfect crunch to the salad.
  • Raisins: They add a sweet little touch. 
  • Sliced almonds: I used Trader Joe’s Honey Roasted Almonds and they added the perfect amount of sweetness and nutty flavor.
  • Curry powder: This is where all the flavor comes from!

 

How to make this salad 

Begin by making the chicken.  Fill half of a large pot with water (enough to cover the chicken) and bring to a boil. Once boiling, add chicken and simmer until the chicken is fully cooked through (about 10 minutes). Remove from the pot and shred chicken using two forks. 

Make the dressing. In a mixing bowl, add Greek yogurt, sour cream, mayo, lemon juice, curry powder, salt, and pepper and mix together. 

Assemble salad. In a mixing bowl add shredded chicken, chopped celery, almonds, and raisins. Top with dressing and mix until everything is combined. 

Serve on bread for a sandwich or on top of a salad. Enjoy!
