Ingredients Used to Make Coconut Granola

  • Rolled Oats: Organic, all-natural rolled oats are a great ingredient to use. Oats are good for your cholesterol and full of fiber and antioxidants. Oats also help control blood sugar levels.
  • Maple Syrup: When selecting your maple syrup, it is important to look at the ingredients list and make sure there are no added sugars, preservatives, or additives. Don’t worry, it is still delicious and sweet!
  • Coconut Sugar: Coconut sugar is a great substitute for cane sugar. It is lower in glycemic index and adds a sweet caramel flavor.
  • Coconut Oil: Coconut oil adds a buttery coconut flavor to the granola.

How to make Healthy Coconut Granola

In a medium-size mixing bowl, combine oats, shredded coconut, craisins, pecans, coconut sugar, and salt.

In a small saucepan, add coconut oil and maple syrup. Warm over medium heat for 2-3 minutes. Whisk frequently until the two are combined. Add vanilla, whisk once more. After that, immediately pour over the dry ingredients. Combine them until everything is fully coated with the mixture. After that, spread evenly on a baking sheet lined with parchment paper. Next, bake at 350°F for 20 minutes.

Let your coconut granola cool before enjoying or strong it.

Store in a sealed bag or container at room temperature for 2 weeks or in the freezer for up to 1 month.

  • Yogurt Parfait. This granola is the perfect topping to complement your favorite yogurt (Siggi’s Greek Yogurt is my go-to). Add sliced Healthy Caramelized Bananas and almond butter, and there you have nutritious filling breakfast or snack!
    • Vanilla Almond Butter is AMAZING! IT has more protein than regular almond butter (thank you to the egg whites!).
  • As cereal: Pour your favorite milk on top, and there you go! Super easy delicious breakfast!
  • Snack: I love packing a bag of granola for a mid-day pick me up a snack at school.
