Chia Stuffed Peanut Butter Cups
Looking for an easy no-bake dessert to get you through the week? Try these Chia Stuffed Peanut Butter Cups. This simple dessert is made with one of my favorite superfoods, chia seeds. This little seed is full of fiber and omega-3 fatty acid.
Ingredients needed to make these cups
- Unsweetened Almond Milk- This will be the base of your peanut butter chia filling. It is the glue that holds everything together.
- Chia Seeds- This tiny superfood is one of my favorites. They are full of fiber, omega-3 fatty acid, and protein! Small but mighty!
- Peanut Butter Powder- It does not have as much fat as peanut butter, but is still full of peanut flavor. By mixing it with all-natural peanut butter, you are enhancing the peanut butter taste while lowering how much fat is in the dessert.
- Peanut Butter- All-natural peanut butter is the way to go. The only ingredient should be peanuts!
- Honey- Honey is a natural sweetener that will sweeten up this dessert.
- Chocolate Chips- Look for paleo options like Hu Chocolate Gems or Enjoy Life.
- Coconut Oil- Use refined coconut oil. It does not have a coconut taste but will help melt and mold the chocolate.
- Vanilla Extract
- Flaky Sea Salt (Optional)
Making these peanut butter cups
Begin by making the chia filling. In a jar, add unsweetened almond milk, chia seeds, peanut butter powder, all-natural peanut butter, vanilla extract, and honey. Shake the jar and sit in the fridge to set for 1-2 hours to overnight.
Once your chia filling is ready, add chocolate chips and coconut oil into a microwave-safe bowl. Microwave for 30 seconds and then mix together. If it is still clumpy, microwave for another 30 seconds. Next, add one tablespoon of melted chocolate to the silicone baking cups and swirl the chocolate to cover the bottom. Once the chocolate has hardened, add one tablespoon of the peanut butter chia filling and another tablespoon of melted chocolate on top. Optional, sprinkle with flaky sea salt. Place in the fridge to harden and then enjoy! Store in the refrigerator in an airtight container.
