Buffalo Chickpea Burgers

Buffalo Chickpea Burgers with Trader Joe’s Buffalo Ranch Chopped Salad is quite the combo! Trader Joe’s never seems to fail me and when I saw their new chopped salad, I knew I had to try it with homemade burgers.

I was hesitant to try buffalo chickpea burgers because I love buffalo chicken burgers. Much to my delight, my buffalo chickpea burgers turned out great!  They are a wonderful vegetarian option if you feel like you’re eating too much meat at summer BBQs! They’re hearty, filling, full of vegetables, and plenty spicy.  Check out the recipe below!

What ingredients do I need to make buffalo chickpea burgers?

  • Chickpeas
  • Sweet onion
  • Zucchini 
  • Breadcrumbs 
  • Minced garlic
  • Hot Sauce- I used Frank’s!
  • Salt
  • Olive Oil

How do I make buffalo chickpea burgers?

One of the best parts of these burgers is how easy they are to make! You only need a blender and a stovetop grill (or skillet).

Begin by rinsing, patting dry, and peeling the skins off the chickpeas. To easily peel the skin off, place them between two towels and run it back and forth. Most of the skin will fall off. It’s okay if you don’t get all of the skins off but it helps with the texture to remove some of them.

Dice the yellow onion and then, using a cheese grater, grate the zucchini into small pieces.

Add all of the ingredients into a food processor or blender. Pulse until everything is evenly combined.

Next, form dough into patties. This recipe should create 4 patties.

Heat your stovetop grill or skillet over medium heat. Add olive oil to the cooking surface and then cook your burgers for 5 minutes, or until crispy, on either side.

** I have not tried a traditional grill. If you are using a grill, l I would spray the surface with olive oil and cook both sides until crispy.

Add your desired toppings and enjoy your burger!

How do I store these burgers?

Store in an airtight container in the fridge for 3 days. Reheat in the microwave for 30 seconds.
