Blueberry White Chocolate Chip Cookies are a totally unexpected combo that goes so well together! If you love blueberries in baked goods, you’re going to want to try these cookies.  They are made from oat flour, almond butter, and coconut sugar and are the perfect melt-in-your-mouth summer cookie.

Blueberry White Chocolate Chip Cookie Ingredients

Just a few simple healthy ingredients stand between you and this decadent summer cookie.

  • Egg: Just 1 egg to hold everything together.
  • Oat flour: I love baking with oat flour! It gives the cookies that ooey-gooey texture and oat flour is super easy to make. Just blend oats in a high-speed blender for about one minute. Use gluten-free oats to make these cookies gluten-free.
  • Almond butter: I used salted creamy almond butter. It gives the cookies the perfect amount of salty flavor.
  • Coconut oil: Make sure you use refined coconut oil so it does not taste like coconut.
  • Coconut sugar and maple syrup: To sweeten these cookies 🙂
  • Baking soda: To make sure everything bakes correctly.
  • Salt: You can skip if you used salted almond butter. I did both but like things saltier 🙂
  • Blueberries: Fresh or frozen work!
  • White chocolate chips: Just one cup of your favorite white chocolate chips.

How to make these white chocolate chip blueberry cookies

Begin by preheating the oven to 350F and lining a baking sheet with parchment paper.

In a large bowl, whisk the egg, almond butter, coconut oilcoconut sugar, and vanilla together until smooth.

In a small bowl, mix oat flour, baking soda, and salt together.

Then slowly add dry ingredients to the wet. Fold until everything is evenly combined.

Next, fold in white chocolate chips and blueberries. Be careful with the blueberries. Try not to mash them.

Using a tablespoon cookie scoop, scoop cookies onto the baking sheet. Then bake on 350F for 10-12 minutes. Let cookies cool completely on the baking sheet before you move them.

  • 1 cup blueberries frozen work!
  • 1 cup white chocolate
