Blueberry Vinaigrette

This Blueberry Vinaigrette is a super easy salad dressing to make and consists of fresh blueberries and only five other ingredients! It goes great with my Blueberry and Grilled Peach Salad or any summer salad. 

I love making salad dressings! They are always so much easier to make than I think and turn out way better than store-bought dressings. You also know exactly what ingredients are in the dressing. No preservatives or added sugars!

What tools do I need?

For this recipe, I used a Vitamix but any high-speed blender will work!

What ingredients do I need to make the blueberry vinaigrette?

  • Blueberries
  • Olive oil
  • Honey
  • Lemon juice
  • Salt
  • Water

How do I make this dressing?

Put all of the ingredients in a highspeed blender and blend for 60 seconds. If it is too thick, add water to get your desired consistency. 

Store in an air-tight container for 3-5 days in the refrigerator. Make sure you stir well before using it. 

What salad goes well with this blueberry vinaigrette?

This dressing pairs perfectly with my Blueberry and Grilled Peach Salad. The sweetness of the dressing paired with the goat cheese is amazing. I highly recommend trying this duo!

Blueberry Vinaigrette

Ingredients

  • 1 cup blueberries
  • ½ cup olive oil
  • 3 tbsp honey
  • ¼ cup lemon juice
  • ¼ tbsp salt
  • spash of water if needed

Instructions

  • Put all of the ingredients in a highspeed blender and blend for 60 seconds. If it is too thick, add water to get your desired consistency.
