Blackened Salmon Cobb Salad

“This is my favorite salad you have ever made!”- My Fiancé. This is the ultimate Blackened Salmon Cobb Salad with Redwine Vinaigrette. It is full of a variety of flavors that blend perfectly together. 

What goes into the Blackened Salmon Cobb Salad?

All of the good stuff! Bacon, avocado, blue cheese, blackened salmon, eggs, mushrooms, red onions, cucumbers, tomatoes, and a zesty Red Wine Vinaigrette.

Blackened Salmon Seasoning:

When I first started cooking I always thought that making seasonings was too complicated. I quickly realized that it is super easy and adds so much to a meal. When making homemade seasoning you know exactly what is going into the mixture too… easy and healthy!

Blackened Salmon Seasoning includes paprika, chili powder, garlic powder, dried oregano, salt, and pepper.  In a jar or a bowl add the ingredients and mix them together. There you have the perfect blackened seasoning!

How to cook the blackened salmon:

Leave the skin on the salmon and rub the blackened seasoning all over the top of it. For best results use a cast-iron skillet. If you do not have a cast-iron any skillet will work. Heat the skillet with 1 teaspoon of olive oil on medium heat. When the skillet is heated, put the salmon face down (skin up). Let it cook for about 2 minutes. After that, flip the salmon, cover and cook for another 10 minutes or to desired pinkness in the middle of the salmon.

 

 

Red Wine Vinaigrette for Blackened Salmon Cobb Salad:

Another healthy and easy alternative to store-bought mixtures… salad dressing! Again, you know exactly what goes into it. For the Red Wine Vinaigrette mix together red wine vinaigrette, olive oil, dijon mustard, and maple syrup. Shake or mix and there you have it!

Ingredients

blacked seasoning for salmon:

  • 1 tbsp paprika
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1 tsp pepper

salad toppings:

  • 1 cup cherry tomatoes
  • 1 cup cucumber
  • 1 cup mushrooms
  • 1 tbsp umami seasoning blend
  • ½ red onion
  • 2 hard-boiled eggs
  • 3 pieces bacon
  • ½ avocado
  • ¼ cup crumbled blue cheese
  • 1 lbs salmon
  • 6 oz spinach 1 bag

Red Wine Vinaigrette

  • ¼ cup red wine vinaigrette
  • ¼ cup olive oil
  • 2 tsp dijon mustard
  • 1 tbsp maple syrup

Instructions

Blackened Salmon

  • Create blackened seasoning by mixing together paprika, chili powder, garlic powder, dried oregano, salt, and pepper.
  • Leave the skin on the salmon and rub blackened seasoning all over the top of the salmon.
  • Add one tbsp of olive oil to your skillet. Heat for about a minute.
  • Put salmon on the skillet with the skin up and good for 2 minutes.
  • Flip the salmon, cover and cook for another 10 minutes or until desired pinkness of the salmon.

Red Wine Vinaigrette

  • In a bowl or jar add red wine vinaigrette, dijon mustard, maple syrup, and olive oil. Shake or stir and enjoy!

Built the Salad!

  • While the salmon is cooking, prepare the rest of the ingredients.
  • Saute the mushroom and red onion in a skillet with 1 tsp of olive oil and 1 tbsp of umami seasoning blend. Saute for 5 minutes.
  • Cook 3 pieces of bacon according to label instructions.
  • Top spinach with chopped hard-boiled eggs, peeled and sliced cucumber, sliced cherry tomatoes, sauteed mushroom & red onions, bacon, and blue cheese.
  • Add your desired amount of red wine vinaigrette.
