Banza Carbonara Pasta 

Carbonara pasta is one of my favorite dinners to have! I love how fresh it tastes and how few ingredients go into it. Make it with Banza pasta to add more protein! 

Ingredients

Sauce Ingredients

  • 2 eggs
  • ¾ cup grated parmesan cheese
  • 1 tsp red pepper flakes
  • 2 tbsp chopped basil leaves

Pasta Ingredients

  • 8 oz Banza Chickpea Pasta
  • ½ cup red onion sliced
  • 1 shallot minced
  • ¼ cup pancetta

Instructions

STEP 1- Cook Pasta and Vegetables  

  • Bring a pot of water to a boil.  
  • Then, dice the red onion and the shallot.
  • Next, heat a skillet over medium heat. Add diced red onion and shallots.
  • Saute for 5 minutes and add pancetta. Cover and cook for five more minutes, stirring occasionally.
  • Add Banza pasta to boiling water and cook according to package.  

STEP 2- Make the Sauce 

  • While the pasta and onions are cooking, prepare the sauce.
  • In a mixing bowl, add two eggs, parmesan cheese, red pepper flakes, and fresh basil.
  • Mix everything together and set it aside until the pasta is cooked.

STEP 3- Put It All Together 

  • Before draining the pasta, save 1/4 a cup of pasta water. 
  • Drain the pasta and then pour the pasta into the bowl with the sauce. the pasta is hot, add the sauce.
  • Add the 1/4 cup of pasta water and mix it well. The hot pasta cooks the egg.
  • Next, add the sautéed onion and pancetta and mix everything together. Sprinkle with parmesan cheese and basil leaves.
