Apple Turkey Meatballs with Spaghetti Squash

Apple Turkey Meatballs

  • Ground Turkey
  • Apple (grated)
  • Breadcrumbs
  • Pumpkin Puree
  • Egg
  • Parmesan Cheese
  • Garlic
  • Cinnamon
  • Rosemary
  • Thyme
  • Salt
  • Pepper

Spaghetti Squash

  • Spaghetti Squash
  • Acorn Squash
  • Shallot

How to make Apple Turkey Meatballs with Spaghetti Squash

Making the spaghetti squash

Preheat your oven to 400°F and line a baking sheet with parchment paper. Slice the ends off of the squash. Next slice the squash crosswise into 1-inch rings and remove the seeds. Place the rings on the baking sheet. Spray both sides with olive oil and sprinkle with salt and pepper.  Bake for 40 minutes, flipping halfway through.

While the squash is cooking, prepare the meatballs.

In a mixing bowl, add ground turkey, grated apples, breadcrumbs, pumpkin puree, minced garlic, egg, parmesan cheese, cinnamon, rosemary, thyme, salt, and pepper. Using your hands or a rubber spatula, mix everything together. Make sure all of the ingredients are evenly mixed. Line another baking sheet with aluminum foil and spray with olive oil. Using 1/4 measuring cup, scoop turkey mixture into your hands and form balls. Place meatballs onto the baking sheet and bake at 400F for 20 minutes.

While the meatballs and spaghetti squash cook, prepare the sauce.

Heat a dutch oven or pot over medium heat, add olive oil and sliced shallot. Saute until fragrant. After that, add diced acorn squash (you can leave the skin on) and sliced red onion. Cover and cook for 10 minutes, mixing frequently. Next, pour in Trader Joe’s Autumnal Harvest Creamy Pasta Sauce. Mix everything together. Turn the heat down to simmer and then cover and cook until the spaghetti squash and meatballs are finished cooking. 

Put it all together

Using a fork, peel the skin away from the rest of the spaghetti squash and add it to the pasta sauce. Mix all of the spaghetti squash “noodles” into the sauce. After that, add the meatballs, serve, and enjoy!
