On a chilly fall evening, I always crave something warm for dinner. This pasta dish screams fall. The thyme and rosemary add so much flavor to the veggies and meatballs. I used Banza chickpea pasta for this recipe. I love using their pasta as a substitute for traditional pasta. It has twice as much protein as regular pasta and more fiber. Banza’s chickpea pasta is also delicious!
This Apple Turkey Meatball Pasta makes for a great lunch. Store in an airtight container in the refrigerator. When you are ready for lunch heat for 2 minutes.

How do I make this pasta dish?
Begin by making the roasted veggies.
Preheat the oven to 400F and line a baking sheet with aluminum foil. Peel and dice the acorn squash and sweet potato. Next, place the diced veggies on the lined baking sheet. Cut the stems off the brussel sprouts and slice the sprouts in half and place on the baking sheet. Slice the broccoli into bite-size pieces and place them on the baking sheet. Drizzle veggies with avocado oil and sprinkle fresh rosemary and thyme on top. Mix the veggies so they are all coated with oil and herbs. Bake for 30 minutes.
While the veggies are roasting make meatballs.
In a mixing bowl add ground turkey, grated apples, minced garlic, breadcrumbs, egg, salt, and pepper. Using your hands, mix everything. Once combined, roll the mixture into individual balls. Each ball should consist of about 3 tablespoons of the mixture. Place the meatballs on the baking sheet and bake for 15 minutes at 400F.
While the meatballs are cooking make the caramelized onions.
Add avocado oil to a skillet and heat over medium heat. Slice the onions. Trim the tip and root off the onions. Halve each onion, then remove the skins. Thinly slice each half of the onion. Add sliced onions to the skillet. Cover and cook for ten minutes, stirring frequently. After five minutes, mix in coconut sugar.
Put it all together.
In a skillet or mixing bowl add roasted veggies, pasta, and caramelized onions. Add butter and mix everything together. Next, add parmesan cheese, fresh rosemary, and thyme. Continue to mix everything together. After that add meatballs, serve immediately and enjoy!
